Sprout Social does not list a Twitch row at all. Linearity's guide gives a per-platform table and says the avatar is displayed at 300 px with the image cropped to a circle; the 800 px figure in its table is an upload recommendation.
The circle at 720 x 720
Linearity describes the Twitch avatar as cropped to a circle. For a square of side s the inscribed circle keeps pi × (s/2)² = 78.54% of the area and removes 21.46%, with the corners clipped at 0.2071 × s and the largest intact square at 0.707 × s.
At 720 px that is a 149 px margin on each edge and a 509 px safe square. A channel avatar is very often a wordmark, and a single wide line of text scaled to 720 px of width ends up roughly 720 x 180, which fits inside the 509 px safe square only if it is vertically centered.
A stacked lockup, mark above the wordmark, fills the circle far better. If the horizontal version is the primary mark, a square or stacked cut is the better asset for a circular avatar.
How much of the avatar you actually see
Linearity reports the Twitch avatar displayed at 300 px. At that size a 300 px upload is exactly enough at 1x and a 720 px upload covers a 2x screen with headroom.
